METHOD
Chop up and mix all ingredients and boil and bottle as for jam. 

NB - add chilies if hot chutney is required

Check that consistency is good and fruit cooked
If not - add a little water and continue cooking until it is just right.

¼ kg   Raisins
340 g Onions
1 t/sp  salt
½ T/sp Ginger
½ kg   Sugar
600 ml Vinegar
Pinch of cayenne pepper
