MOCK TURTLE SOUP

Method
Peel turnip and dice 10mm cubes
Add all ingredients to soup pot and simmer slowly for 30 minutes
Strain to clear liquid

SERVE
Add mouthful of medium sherry,
Put into preheated soup bowls
Pour cream over back of spoon into each bowl

DECORATE
Dust with paprika and garnish with parsley
