STUFFED BRINJALS
(6 servings)
METHOD
Peel the brinjals and half them lengthways
Remove the pulp & mince with beef, pork, onion and roll
Add egg, salt, paprika and anchovy
Mix well and stuff brinjals
Pour a little stock to the bottom of a well buttered casserole
Place the brinjals in it
Sprinkle with grated cheese and butter flakes and bake in medium heat for
30min
Serve as a starter
STUFFED TOMATOES
METHOD
Cut top off toms and scoop out soft portion
Blend together, tom pulp and other ingredients
Stuff the tom cases and garnish with a parsley sprig
Serve
Cut Picnic loaf into thin slices place on a lettuce leaf
Garnish plate with the stuffed tomato

3 Beef or Pork sausages
1 onion
1 soaked crustless roll
1 egg
salt, pepper, paprika and anchovy
little beef stock
grated cheese
butter
Tomatoes
Firm ripe tomatoes (1 per person)
Grated cheese
Half hard boiled egg per person
salt
paprika
chopped parsley and chives
