CHEESE TOAST
Slices of white bread are toasted on one side
Then turnover and, on the untoasted side, thickly butter
& add a layer of sweet milk cheese
half as thick as the bread . The slices are put on a baking sheet and put under the grill
until they are golden yellow and runny. On removal sprinkle with salt (and paprika if you
like) and serve quite hot.
SMOKED SALMON SLICES
Dip thin slices of white bread toast in milk, place smoked salmon slices
of the same size already soaked in milk between them.
Sprinkle the top with grated cheese and little dabs of butter and
bake on a greased baking sheet in the oven.
Serve as finger slices.
MUSHROOMS ON TOAST
Braise mushrooms with chopped shallots to which sweet or sour cream is
added
Salt and pepper to taste.
Fry thin slices of white bread in butter on both sides
Cover the fried bread with the braised mushrooms
Sprinkle them with lemon juice and finely chopped parsley
Serve on warm plates.
