METHOD
Rub the cleaned fish with pepper and salt - sprinkle it with lemon juice, leave to stand for an hour.

Dry well. Wrap in strips of fat bacon

Place in a fire proof dish with the back of the fish towards the top - baste with olive oil.

place in a pre-heated oven 180c

Bake the fish, without turning it, for about half an hour. Baste frequently with oil.

Slowly add sour cream, corn flour mixture

When mixture has thickened remove fish and Serve - on a platter  with green peas and piped mash potato

Serve  sauce in a gravy boat.

500g bacon

sour cream mixed with cornflower
