PAELLA
METHOD
Braise onion and garlic in butter, add chicken
and brown.
Add rice bay leaf, chicken stock and salt to taste,
cover and simmer for +/- 20 min (bite test rice to see that it is 2 cooked)
add remainder of ingredients including Cray shells, cover and finish cooking
rice.
Serve with good red or white plonk.

2T/sp. Butter
1cup Rice
1 Large onion
finely chopped
1t/sp. Crushed Garlic
1 Large bay
leaf
1t/sp. Turmeric or pinch of saffron
1 Pimento
3cup Chicken stock/ white wine
12 Large prawns
1 Cray tail (cubed+shell)
12 mussels in shell
60g sliced mushrooms
125g green peas.
