Octopi/Fish
Method
Stock
Beat octopi well.
Boil in 1.5lt water for 15 min,
Strain stock through stocking in sieve into bowl.
[set aside meat for CURRY]
In soup pot melt large dab butter,
gently fry finely chopped onion until opaque,
stir in flour,
add stock while stirring
Simmer.
Prepare FISH by removing all bones & skin & cutting meat into 15
mil cubes.
Warm soup bowls.
Taste for salt & pepper.
Add fish and simmer for FIVE min.
Pour into bowls.
DECORATE;
Pour cream over back of spoon into each dish,
Add sprig of parsley |
