Method
Pastry Base
Sift flour and salt into bowl and make a well in the center
Cream yeast with sugar, milk and little of the flour
Pour into well in the flour
Sprinkle with flour then cover and leave in a warm place for 15 min until
frothy
Gradually work in rest of flour with the olive oil and knead the dough for
5 - 10 min
roll out two 18cm/7inch rounds of dough and place on greased baking tray.
Preheat oven 350 deg F
Topping
Coarsely grate soft cheese, finely grate hard cheese, finely chop
remaining ingredients.
Garnish with tomato, onion etc. and cheese last, sprinkle with a little
olive oil & leave to stand for 15 min before baking.
Bake in a hot oven (near top) for +/-40 min (cheese must be very chewy).

Topping
1 onion, (diced)
2 ripe tomatoes, (crushed/chopped)
Tin anchovies/chopped mushrooms/salami/black olives/pineapple/tuna,
grated cheese, (lots of soft cheese & a little hard - Parmesan)
